If you’re looking for something quick to make this week, give this pasta dish a try. Not only is it fast to prepare, it’s pretty healthy and has a very light and refreshing taste. I love it.
Creamy Avocado Pasta
from Two Peas & Their Pod
6 oz pasta (I’ve only used spaghetti noodles)
1 large ripe avocado, peeled and pit removed
1 T lime juice (from an actual lime, not a plastic bottle that looks like a lime)
1 clove garlic, minced
1/4 c chopped fresh cilantro
1/2 t kosher salt, or to taste
freshly ground black pepper, to taste
What To Do
Cook your pasta according to the directions on its box, to al dente.
While the pasta is cooking, make the sauce: place the avocado, lime juice, garlic, cilantro, salt and pepper into a food processor or a blender. Process/blend until creamy and smooth.
Drain pasta when it’s done cooking and toss with sauce until well coated. Season with more salt/pepper if desired. Serve immediately.
Two people can eat all of this. We’ve never had leftovers so I don’t know how well any would keep or how it would taste reheated.
