Herb-Roasted Potatoes Poupon

Oh the weather outside is frightful! But really pretty since I don’t have to go anywhere today.  It’s the perfect day to stay inside and cook up a storm – the yummy comforting kind.  Instead of sliding down the road, why not slide these potatoes into the oven and enjoy a hearty helping of potato-y goodness.

Herb-Roasted Potatoes Poupon
slightly adapted from Grey Poupon – cut out of a magazine years ago
makes about 4 servings

5 T Grey Poupon Dijon mustard
2 T olive oil
1 clove garlic, chopped
1/2 t Italian seasoning
6 medium red-skin potatoes (about 2 lbs), cut into chunks

What To Do
Preheat oven to 425°F.  Mix all ingredients except potatoes in a small bowl.  Place potatoes in a large bowl and pour mustard mixture on top.  Toss until all potatoes are coated.  Spread coated potatoes evenly onto a greased 9x13x2-inch baking pan or on a shallow baking sheet.  Bake for 35 – 40 minutes or until potatoes are fork tender, stirring occasionally.

My Comments
Of course, use any brand of Dijon mustard you want.

I use my garlic press to chop to garlic clove.

I line my baking sheet with foil for easy clean up.  Spray the foil so the potatoes don’t stick to it.

I sprinkled a little fresh thyme on top after placing the potatoes on the serving dish.


Delicious!! These potatoes are such a tasty side dish.  They are full of flavor and I love the slight crunch on the outside with the soft inside.
