It’s not quite strawberry season yet (one day it will come!) but if you’re craving some chocolatey strawberry goodness now, then you should try these bars!
Chocolate Covered Strawberry Bars

1 stick unsalted butter, softened
1/4 t salt
1 c firmly packed brown sugar
1/2 t vanilla extract
1 c all-purpose flour
1 t baking powder
1 c old fashioned oats
1/2 c strawberry jam
1/3 c dark chocolate chips
What To Do
Preheat oven to 350°F. Line an 8 inch square pan with non-stick foil.
Beat the butter, salt and brown sugar in medium bowl until smooth and fluffy. Beat in extract. Mix together the flour and baking powder, then add to the batter. Stir until well mixed, then stir in the oats. Reserve a heaping 1/2-cup for topping. Pat remaining crumbs into bottom of prepared pan.
Spread strawberry jam evenly over crumb crust in pan. Toss the chocolate chips with the reserved crumb topping and sprinkle over the top
Bake for 30-35 minutes or until lightly browned. Cool on wire rack, then lift from pan and cut into bars.
I didn’t have any dark chocolate chips so used milk chocolate. Next time I will try to get some dark chocolate chips.
Make sure you use good jam – one with chunks of strawberries in it! YUM!
